Pork Salad

Use leftover cooked pork tenderloin or grilled chicken to pull this crisp and refreshing salad together in minutes. It is perfect for lunch or an easy weeknight dinner.  Use BBQ sauce to give salad a whole new taste! This salad goes great with a slice of crispy Texas toast. How to Make This Salad

A great way to use leftover pulled pork, store-bought cooked pork, rotisserie chicken or leftover grilled or baked chicken is to make it the star of this easy salad. Check out our recipe for pork tenderloin for easy instructions on how to cook pork tenderloin in the instant pot.  Chop cooked tenderloin or chicken and set aside.

Prepare a salad with your favorite ingredients.  See recipe card below for measurements. I like to keep this salad simple with just lettuce and tomato.  Sometime I will add a little chopped broccoli.  The pork is the star of the show and really just needs some crisp lettuce and fresh tomatoes to make it a winning trio.

Add chopped cooked pork tenderloin or chicken to your salad and top it off with your favorite BBQ sauce.  I have done both cold and warmed pork and chicken and BBQ sauce. You can also leave off the BBQ sauce and serve with your favorite salad dressing instead.

Ingredients

  • 2 cups Cooked Pork Tenderloin {Leftovers work Great} (or Cooked chicken – baked or grilled)
  • 2 cups Shredded Lettuce (Iceberg or any variety lettuce)
  • 1 cup Diced Fresh Tomato
  • ½ cup BBQ Sauce

Instructions

  • Chop lettuce.
  • Dice tomato.
  • Shred or slice cooked pork tenderloin or chicken.
  • Combine lettuce, tomato and tenderloin or chicken and put in 2 salad bowls.
  • Top with cooked pork or chicken.
  • Pour BBQ sauce as dressing.
  • Serve immediately or refrigerate and enjoy later.
