How to Make Meat and Potatoes Recipe

I like to use ground chicken for this meat and potatoes recipe.  It is a healthy alternative to ground beef, and it gives the dish a nice filling texture.  If you can find ground premium white chicken breast it is worth the extra dollar or two to get a more wholesome flavor.  The package that I used stated that there are no hormones or steroids added, and that the chickens are raised on an all vegetarian diet with no animal by-products and are raised cage free.

Ground Chicken

If you can’t find the exact brand or type, just substitute regular ground chicken.  I don’t recommend ground turkey for this recipe since it cooks into a finer mixture.

Main Ingredients

1 pound ground chicken

1 onion

6 to 8 medium potatoes (I like to use Golden Potatoes)

Directions

First, peel the onion and chop it into small pieces.  Next, wash, peel and cut potatoes in small cubes.  After cubing the potatoes,  I like to cover them in a bowl with water to keep them from turning brown while I prepare the chicken.  Now turn your attention to the chicken. Place raw ground chicken in a non-stick skillet and set the temperature to medium high heat.  If you don’t use a non-stick skillet then add a little olive oil because ground chicken doesn’t contain grease like ground beef so it will stick to the pan.  Brown chicken by stirring constantly with a spatula.  It will be a light tan color with firmer texture as it cooks.  Turn off burner on stove while you remove chicken, then drain chicken in a colander while rinsing with warm water.  Pour chicken onto a plate, pat it dry, and set it  aside.

Drain potatoes from bowl and pat dry with a paper towel.  Place a tablespoon or two of olive oil in the skillet and  set temperature to high.  Add onions and potatoes.  Be sure potatoes are dry or the oil will splatter.  Lightly salt mixture.  Use a spatula to stir potatoes and onions for about 7 or 8 minutes then adjust the skillet temperature to medium high.  Cover with a lid and cook for about 10 minutes, stirring occasionally.  Next, add ground chicken to the mixture, and cook for and additional 7 or 8 minutes.  Test to be sure potatoes are soft by piercing them with a fork.  Continue to stir until potatoes are soft.  Finish by turning burner off and pour mixture into a casserole dish to serve.

To Add Variety to the Meat and Potatoes Recipe

  • Top serving with Monterey Jack or shredded Cheddar cheese.
  • Add a side of salsa.
  • Serve on white bread or sub bun as a sandwich – add ketchup if desired.
  • Roll up on a tortilla with salsa.

Notes

Be sure to cook chicken thoroughly. Be sure that potatoes, onion, and chicken are dry before adding to oil. Excellent reheated for leftovers for several days.
