Pan Seared Fresh Rainbow Trout Ingredients

I have cooked many different varieties of fresh fish over the years, but my when my husband suggested that we get some fresh rainbow trout and cook it for dinner I realized that I had never fixed trout.  He had been ordering it at a local restaurant and it had become one of his favorites so I decided to try it out.  We bought 1/2 pound since it was just the two of us and this was my first recipe for preparing trout.  A local grocery store carries a wide variety of fresh fish, and they will fillet it for you.  They had already filleted these so I just picked it out of the case.  It was the two pieces attached at the top and bottom, so I had to slice it maybe an inch on each end before preparing.  The skin was on one side.

How to Make Fresh Rainbow Trout

I put about 3 tablespoons of melted butter  in a frying pan.  After rinsing the fish, and patting it dry I left it on a plate to rest while I sliced a lemon.

I turned the frying pan to medium high heat until the butter heated up.  Next I placed the fish in the pan with the skin side down. I squeezed about half of the lemon over both fillets, then sprinkled with salt.  I let them sizzle for about 5 minutes.  You can tell when they are getting done because they turn whiter and the texture changes from raw looking to a moist but firm texture.  After five minutes, I flipped each piece over and let it cook about 2 more minutes.  I flipped it one more time before putting it on our plates so it would be right side up.  It smelled wonderful cooking, and when we tasted it – oh my it was delicious! It was a very light, clean tasting dish. How could I have not been fixing this all along?  I am sure that we will have many more easy fish dinners in the future.  I hope you enjoy it, too!

Ingredients

  • 1/2 pound fresh trout fillets
  • 3 tablespoons butter
  • salt
  • lemon

Instructions

Rinse fish and pat dry. Place on a plate to rest.

Slice lemon.

Place 3 tablespoons butter in a skillet and heat on medium high heat.

When butter sizzles place fish fillets, skin side down, in frying pan.

Add juice of 1/2 lemon directly to fillets and a sprinkle fish with salt. Cook 5 minutes.

Turn fish with a spatula and cook 2 minutes.

Turn fish so that skin side is down once again. Remove and place on serving plate.

Top with optional parsley, if desired.

Notes

Extremely quick and easy to prepare and cook. Fish should look opaque/white as it gets done. The seasoning in this recipe is very mild but delicious. Feel free to experiment adding other spices instead of the salt.
