How to Make Corn Casserole

Ingredients are easy to find. You probably have most of them in your pantry already.

5 Ingredients (4 without butter) – You probably have most of these in your pantry and refrigerator already!

Begin by melting a stick of butter or margarine.  I put it on a microwave safe bowl and heat for 45 seconds.  It melts perfectly. 

Next, in a large bowl combine 1 box Jiffy corn muffin mix, 1 cup sour cream, 1 can of sweet creamed corn, 1 can of drained whole kernel corn.  Add melted butter or margarine and stir until mixed well.

Finally, pour mixture into a greased 9X13X2 baking dish.  Bake at 350°F for 45 to 50 minutes or until golden and set.  The texture should be like light cornbread, but moist inside.  Remove from oven, serve and enjoy!

Recipe Variations

  • Corn Casserole Without Butter – Prepare recipe as directed but omit butter. The result will be a tasty dish that has a slightly more cornbread texture and a little less creamy. Making it without butter helps to make it a low calorie and low fat dish.
  • Vegetarian Corn Casserole – Substitute Jiffy Corn Muffin Mix with Jiffy Vegetarian Corn Muffin Mix 8.5 oz. box.
  • Gluten-Free Corn Casserole – Substitute Jiffy Corn Muffin Mix with Bob’s Red Mill Gluten Free Cornbread Mix or King Arthur Gluten Free Cornbread Mix.  Measure 1 1/2 cups of mix to equal amount in 8.5 oz. box of Jiffy Corn Muffin Mix.
  • Low Calorie Corn Casserole – Use fat free sour cream and omit butter.  Texture will be more like a light cornbread instead of cream, but it is delicious and healthy!
  • Mexican Street Corn Casserole – Use Southwestern whole kernel corn instead of plain whole kernel corn and use Mexican corn bread mix instead of Jiffy Corn Muffin mix. Additionally, add 1 cup of shredded Mexican blend cheese. Bake as directed for 50 minutes until set.
  • Chicken Bacon Ranch Corn Casserole – Add one or two cups chopped rotisserie chicken, 1/2 cup chopped cooked bacon or bacon bits, and 1 package ranch dressing. Bake as directed for 50 minutes until set.
  • Cheesy Corn Casserole – Add 2 cups shredded sharp cheddar cheese. Bake as directed for 50 minutes until set.

Ingredients

Notes

Refrigerate leftovers for up to 7 days.  You can reheat leftovers in the microwave for about 30 seconds to 1 minute for a single serving.  You can also freeze baked casserole for up to 3 months. A frozen whole corn casserole reheats best if thawed in the refrigerator overnight before reheating in the oven. Cover with aluminum foil to retain moisture while reheating.  Frozen single servings can be reheated in the microwave with or without thawing first.
