Sometimes nothing but a good chicken salad recipe will do! I don’t know about you, but I get a craving for a delicious sandwich or salad with it from time to time. Sometimes I like it plain with just chicken, celery and a little mayonnaise. Other times I like it all dressed up with grapes and nuts!
This is an easy dressed up recipe. It makes about 4 servings so you can fill your craving today and have lunch tomorrow. See recipe below for easy instructions.
You can use leftover baked or grilled chicken, rotisserie chicken or instant pot chicken to make this recipe very quickly and easily. It keeps well in the refrigerator for about 3 days in a storage container.

Chicken Salad
Ingredients
- 1 cup shredded chicken
- 1/4 cup seedless grapes cut in half
- 1/2 cup chopped pecans
- 1/4 cup chopped celery
- 1/2 - 3/4 cup Miracle Whip or Greek yogurt
- salt and pepper
Instructions
Mix chicken, grapes, pecans and celery.
Add salt and pepper to taste.
Add Miracle Whip or Greek Yogurt to get the desired consistancy. Less if you want drier and more if you want creamy.
Stir gently.
Serve on your choice of bread, toast or over salad.
Refrigerate leftovers.
