Ingredients

  • For the chicken
  • -3 Chicken breast
  • -Gouda cheese (I bought it in a round block, then sliced it)
  • -1 Apple (I like red apples best, I bought Fuji since it was on sale at the time)
  • -olive oil
  • -thyme
  • -salt
  • -pepper
  • For the sweet potatoes
  • -3 medium sweet potatoes
  • -olive oil
  • -paprika
  • -thyme
  • -salt

Instructions

Preheat oven to 400°F.

Butterfly the 3 chicken breasts.

Thinly slice the gouda cheese.

Thinly slice the apple.

Dice sweet potatoes into 1 inch cubes.

On the opened butterflied chicken, place apple slices and cheese slices to cover one side of the chicken breast.

Close the butterflied chicken and place on sheet pan.

Sprinkle thyme, salt and pepper to taste, then drizzle with olive oil.

Repeat with all chicken breasts, leaving room on sheet pan for cut up sweet potatoes.

Place sweet potatoes around chicken on sheet pan.

Sprinkle paprika, thyme and salt to taste then drizzle with olive oil.

Bake for about 40 minutes until chicken is cooked thoroughly and sweet potatoes are tender.

Notes

Easy recipe. (Hardest part was cutting the sweet potatoes) Easy clean up. Makes great leftovers for lunch.
