Biscuit Casserole

Try this Biscuit Casserole for a comforting main dish tonight.  It is so easy to make and you can use your choice of ground beef, ground chicken, or ground turkey.  The simple ingredients come together so well you will wonder why you haven’t tried it before!

How to Make Biscuit Casserole

Cook 1 pound of ground beef, ground chicken, or ground turkey and 1 chopped onion in a skillet stirring with a spatula until the meat is done and the onions are tender.  It will take about 10 minutes.  Drain meat and onions in a colander, rinse, and pat dry.  Return cooked meat and onions to skillet and stir in an 8 oz. can of tomato sauce (not tomato paste), 1/4 cup of diced green chiles (the tiny can), and 2 teaspoons chili powder.  Cook on low heat for 10 minutes, stirring occasionally to keep it from sticking.  In a small bowl lightly beat one egg and mix in 1/2 cup sour cream and 1/2 cup cheese.  Pour sour cream mixture into skillet with meat and stir well.  Take skillet off burner.

Separate a can of 10 biscuits (store brand biscuits work fine)  into halves, making 20 round biscuit halves.  In an ungreased 9×9 casserole dish or other casserole dish of similar total size,  place 10 of the biscuit halves in the bottom slightly pressing them down.  Spread meat mixture over biscuits.  Add another layer of the remaining 10 biscuit halves on top.  Sprinkle 1 cup shredded cheddar cheese on top.  Bake uncovered at 375° for 25 minutes or until biscuits are golden.  Remove from oven and serve.

This casserole refrigerates well for those busy nights when you come home from a long day and just want to reheat and eat.  Enjoy!

Ingredients

  • 1 pound of ground beef (or ground chicken or ground turkey)
  • 1 small to medium sized onion, chopped
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup diced green chiles
  • 2 teaspoons chili powder
  • 1 egg
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese - divided
  • 1 (10 ounce) can buttermilk biscuits

Instructions

Brown ground beef (or ground chicken or ground turkey) in a skillet with one chopped onion over medium high heat.

Stir constantly with a spatula to break up meat as it cooks. Cook for 10 minutes or until meat is done and onions are tender.

Pour meat and onions into a colander in the sink and rinse with warm water to remove fat. Pat dry and return meat to skillet.

Add tomato sauce, green chiles, and chili powder. Cook for 10 minutes, stirring occasionally to keep mixture from sticking to skillet. Turn off skillet and set it aside.

In a small bowl, lightly beat one egg and add sour cream and 1/2 cup shredded cheddar cheese. Stir to combine.

Add sour cream mixture to meat in skillet and stir to mix well.

Open can of 10 biscuits and separate each biscuit in half giving you a total of 20 biscuit halves.

Place 10 biscuit halves in an ungreased 9x9 (or similar total size) casserole dish.

Pour meat mixture on top of biscuits.

Place remaining 10 biscuit halves on top of meat mixture.

Sprinkle with remaining 1 cup of cheese.

Bake at 375° for 25 minutes or until biscuits are golden.

Remove from oven, serve and enjoy!

Notes

Refrigerate leftovers promptly. Reheat leftovers in microwave or toaster oven. Use your favorite kind or biscuits and cheese. An exact casserole size casserole dish is not necessary. Use one that holds ten biscuits without much room leftover.
