  • ¼ tsp baking powder

  • 3 TBLS milk (whole or 2% milk)
  • 3 TBLS sugar (for combining with egg whites)
  • 1 TBLS lemon juice (from concentrate or fresh)
  • 1 apple peeled apple sliced thinly into small slices (fuji, gala or honeycrisp work well)

  • 1 can spray olive oil (to grease pan)

Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Coat a 9 inch glass pie plate deep dish or other oven safe casserole dish about the same size with spray olive oil. (Optionally, you can use a cast iron skillet that has been seasoned with olive oil, butter or shortening and preheated for about 3 minutes before pouring batter into it. Don't overheat it as the pancake will burn.)
  • In a small bowl, mix flour (all purpose flour or self rising), baking powder and salt.
  • In another small bowl whisk together egg yolks, milk and lemon juice.
  • Combine egg yolk mixture into flour mixture and stir with whisk until smooth and not lumpy.
  • In a medium bowl beat egg whites with a hand mixer until foamy. Gradually add 3 TBLS sugar by pouring it slowly into egg whites while mixing. Beat on high until the egg whites are stiff.
  • Fold egg yolk / flour mixture that you already mixed in step 5 above into the medium bowl with stiff egg whites. Gently combine until thoroughly mixed and smooth.
  • Pour mixture into prepared pie plate, oven safe casserole dish or cast iron skillet.
  • Wash, peel and thinly slice one apple.
  • Arrange apple slices in a circular patter in the batter around the glass pie plate or follow the shape of the dish or cast iron skillet. Place apples in the center inner circle so there are apples in every bite!
  • Sprinkle top generously with cinnamon sugar.
  • Bake at 375 degrees Fahrenheit for 18 to 20 minutes until a knife inserted into middle comes out clean (without raw batter sticking to the knife.)
  • Remove from oven and serve immediately.
